Pear and Chocolate Bread

It started with two friends who mentioned how good Lindt pear bar is. I never got to try it, but hey, pear and chocolate never fail me. I guess I need to visit Lindt cafe soon to check whether they have some in-store, as I've never seen the pear bars on supermarket shelves.

The bread? It's a hybrid. The base is a yeast bread that is not too sweet - a bit on savoury side instead. Feel free to add more sugar to make it sweeter. The bread recipe is my default to-go when I need a basic yeast bun. The filling consists of thinly-sliced pear and coarsely chopped dark chocolate. The topping is inspired by Mexican buns. So you get a range of flavours here: soft a-tad-savoury bread, bittersweet filling, and sweet crunchy topping.

Pear and Chocolate Bread
for the bread:
120 gr bread flour
1 tsp instant dry yeast
30 gr caster sugar
1 egg yolk
60 ml water
30 gr unsalted butter
1/8 tsp salt

filling:
1 pear, peeled and cored, thinly sliced
dark chocolate, coarsely chopped

1. Mix dry ingredients except salt in a bowl. Add yolk and water, mix until combined. Add butter and salt, knead until elastic.
2. Rest for 1 1/2-2 hours covered, on room temperature. Punch dough down and set aside for 10 minutes while preparing the filling.
3. Roll dough 1/2-inch thick. Arrange pear slices, slightly overlapping, leaving 1/2-inch border on each side. Sprinkle chopped dark chocolate and roll dough up.
4. Place in lined loaf pan and let rest for another 1 hour.
5. Preheat oven to 180C. Prepare topping. Just before baking, pipe topping mixture on top of the dough.
6. Bake for 10 minutes, then lower oven temperature to 160C. Bake for another 20-25 minutes or until cooked through.

for the topping:
75 gr butter
50 gr caster sugar
2 egg yolks or 1 egg (it will be crunchier using yolks only)
1/4 tsp vanilla extract
60 gr plain flour

1. Beat butter until soft. Add sugar and beat until light and fluffy.
2. Add yolk and vanilla extract. Beat until blended.
3. Add flour and mix until just combined.
