White chocolate oatmeal cookies

I am addicted to cookies recently. Not because they come in tiny packages (I still eat more than just one at a sitting, although I know it is doing no good to the waistline). I'm not sure why. Probably because they are just more flavorful than cakes or other desserts. With cookies, one can get both crispy, chewy, soft texture in one bite. That's just lovely.

At the moment I have a small bowl of The (so-proclaimed) Best Chocolate Chip Cookies dough in the fridge. And damn, I still have to wait until tomorrow night. By then there will be probably only third-quarter of the dough left. Cookie dough are hard to resist.

White chocolate oatmeal cookies

White Chocolate Oatmeal Cookies
120 gr plain flour
3/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
100 gr butter
100 gr caster sugar
1 large egg
1 tsp vanilla extract
200 gr rolled oats
100 gr white chocolate, coarsely chopped
1/2 tsp sea salt

1. Preheat oven to 180C and line a baking sheet. Whisk flour, baking powder, baking soda and salt in a bowl.
2. Beat butter and sugar until smooth. Add egg and vanilla and beat until incorporated.
3. Add flour mixture and mix until almost combined. Add oats and chopped white chocolate, stir until incorporated.
4. Divide dough into 1-teaspoon balls. Place on baking sheet and flatten a bit. Sprinkle with sea salt.
5. Bake for 12-15 minutes. Cool on pan for 5-10 minutes before transferring to wire rack.

#Valen: I first thought it would be a tad too sweet, but it turns out that the nutty taste of oatmeal complements the white chocolate really well :)

There are some recipes online that adds in some cranberries into the WCOC. The recipe is almost the same as yours, except for the cranberries. Soak the cranberries in egg and vanilla before you use it. It adds a nice touch of slight tartness to the cookie., and better colour too.
