This is probably the healthiest thing we've made so far (apart from carrot bread).
80 gr rolled oats
1/2 tsp salt
20 gr caster sugar
10 gr butter
240 ml water, boiling
240 gr bread flour
1 tsp yeast
30 gr water
1. Mix together rolled oats, salt, caster sugar, and butter. Pour over boiling water and set aside for 30 minutes or until lukewarm.
2. Add flour, yeast, and 30 ml water. Mix until combined, then knead until smooth and elastic. Cover and let rise for 1 hour.
3. Punch dough down and set aside for 10 minutes. Grease a baking pan. Knead dough a few times, shape, and place in the prepared pan. Cover and rest for 1 hour.
4. Bake in preheated oven at 180C for 30 minutes. Cover top with foil halfway through to prevent overbrowning.
