Banana and Almond Bread

Few days ago I came across The Knead For Bread. Upon seeing Chuck's Almond Banana Bread I was like "Aha! Now I know what to do with those two overripe bananas in the fridge!"

Chuck's recipe uses mashed bananas in the dough; I didn't. Mine was just a simple bread with frangipane (almond mixture) and banana slices as the topping.

Banana and Almond Bread
for the bread:
120 gr bread flour
20 gr caster sugar
1 tsp instant dry yeast
1 egg yolk
55 gr water
20 gr butter, softened
1/8 tsp salt

1. In a bowl, mix flour, sugar, and yeast. Make well in the centre.
2. Add egg yolk and water, mix thoroughly. Knead until dough is almost elastic.
3. Add butter and salt, knead until elastic. Put in a lightly greased bowl, cover with plastic wrap, and allow to rest for 1 hour.
4. Punch dough down and set aside for 10 minutes. Meanwhile prepare the topping (recipe follows).
5. Grease and line an 8-inch square baking pan. Roll dough out to approximately the same size as pan. Transfer rolled dough to prepared pan. Spread lightly to fill the corners.
6. Spread almond topping over the dough. Arrange banana slices on top, pushing them down a little.
7. Cover with plastic wrap and set aside for 30 minutes. Bake in preheated 180C oven for 20-25 minutes.

for the topping:
60 gr butter, softened
60 gr icing sugar
1 egg
60 gr almond meal
10 gr plain flour
1 large banana
1/4 lemon, juice of

1. Beat butter with icing sugar until light. Add egg, followed by almond meal and plain flour. Stir to combine.
2. Slice the bananas and squirt a little of lemon juice over them to prevent browning.
