Blueberry and Lemon Cream Cheese Tart

This is what I'm going to make for tomorrow's mass at my university (well, without the fresh blueberries, because they are too expensive for such an event!). The Catholic Indonesian students at my uni are holding a mass tomorrow.. and I was asked to bake something. Something other than brownies (the most versatile recipe for a gathering, I guess - simple, easy, chocolate, and not messy).

Then I remembered that weeks before, I had (jokingly) promised to a friend that if someone asked me to cook something to use up the eggs in my fridge, I'll bake something for his birthday - which was a few days ago. Back then I was really desperate to use up those eggs before going back home next Sunday.

I didn't have the slightest idea that my joke would come true. But a promise is a promise. So I bake for him today. Well, not that special - I baked because I need to try. I don't have the exact recipe nor method for these babies, so I had to try or I'll end up with batches of inedible tarts tomorrow.

Blueberry and Lemon Cream Cheese Tart
2 (25x25cm) sheets frozen puff pastry, slightly thawed
75 gr blueberries

Lemon-Cream Cheese filling:
50 gr caster sugar
125 ml lemon juice (from 2-3 lemons)
75 gr cream cheese, at room temperature
1 large egg, at room temperature
1 tbsp grated lemon zest
  1. Preheat oven to 350 F/180 C.
  2. If using frozen blueberries, thaw on clean tea towel.
  3. Grease or spray 24-cup mini (1/8 cup capacity) muffin pan.
  4. In food processor or electric mixer, process cream cheese until smooth.
  5. Add sugar and process until well incorporated.
  6. Add egg and process again until mixed.
  7. Add lemon juice and zest and process until smooth.
  8. Cut each sheet of puff pastry into 9 squares.
  9. Place each puff pastry square into holes in muffin pan.
  10. Spoon the lemon-cream cheese filling evenly to each squares (approximately 1 tbsp each).
  11. Divide the blueberries evenly.
  12. Bake for 23-25 minutes.
  13. Cool on wire rack.
  14. Dust with icing sugar and fresh blueberries to serve.
